11 oz. soft tofu (box of soft Mori-Nu tofu works great!)
3 ripe bananas
1 tsp. vanilla
1/3 cup honey
1/4 cup shredded coconut - optional
Blend all ingredients until creamy. Pour into a partially baked 9" pie
shell
and sprinkle coconut on top. Bake, covered, for 15 minutes (I use another
pie
pan to cover), then uncover and bake for 5 minutes or until the top
is slightly
brown. This one's yummy and easy to bake when you're in a hurry to
munch out!

This is the best thing you can do with oatmeal, besides take a bath
with
it when you have chicken pox. The measurements aren't exact,
but good
enough.
Ingredients:
2 cups of oats
1/2 cup maple syrup
3 tbs. white sugar
1 1/2 tbs. brown sugar
1/2 tbs. butter
2 tbs. vegetable oil
Dash of cinnamon
Raisins and chocolate chips (your desired amount)
First, melt butter in a pan over medium heat. Add oats, brown
and white
sugar, vegetable oil, and syrup while stirring. When ingredients
are
mixed together with a moist texture, remove from heat. Next,
add
desired amount of raisins and cinnamon. After, take mixture out
of the
pan, and place it onto a piece of waxed paper. Press down into
a square
(or any other shape...get creative). Place the chocolate chips
onto the
mixture with enough pressure so they will melt. Chill in the
fridge for
8-12 minutes, or until set, but not hard (not you silly, the mixture).
Cut into pieces.
Serves 2-4 people.

Amazing Bean Dip
Ingredients:
1 lg can (16 oz) refried beans
3/4 c sour cream
3 oz cream cheese (softened)
1 c picante sauce
1 c cheddar cheese (finely shredded)
1 c Monterey jack cheese (finely shredded)
1 tbsp. chili powder
1/4 tsp. ground cumin
Mix all ingredients in a crock pot/slow cooker and allow to heat until
melted together. (You can also do this on the stovetop on low heat
or even
in a huge microwave bowl, stirring frequently.) Serve with tortilla
chips
and salsa.

mix dry ingredients..slowly add water to make a stiff
dough. flour hands
and kneed for a few minutes. cover with cloth and
set aside.
filling....... 4 boiled potatos, skin on, diced into
1/4 inch cubes.
1 medium/large onion.
2 small/meduim carrots, diced and boiled with potatos
2 stalks celery, chopped well
1 clove garlic, minced
1/2 frozen peas. (canned or fresh is fine. whatever)
fry onion, celery, garlic and peas in a little water
or oil. when onion is
clear, remove. let cool a few minutes. add to potatos
and carrot. (and
anything else you might want to throw in)
add ..... 1 tbs curry powder
1-3 tsp dry mustard (depends on how you like it)
pepper to taste
1 tsp cumin/corriander
add a little water to filling if it is dry. you dont
want a sauce of
anykind though. the filling should fairly dry, but
not sticky.
roll dough into a ball about the size of a small
clementine. roll out with
pin to an 6-8 inch diamter...pretty thin is ok.
or thicker if you like. cut
circle in half. drop desired amount of filing on
to half. wet edges of
cirlce and pinch together. leaving no openings...they
should like little
triangles.....seal well!
bake on greased sheet at 375 degrees for 20-30 minutes...flipping
if you
want brown sides.

Death By Chocolate
A Fatal Dessert You Can Make in Just One Hour
Ingredients
24 oz. semi-sweet chocolate
2 quarters unsalted butter
2/3 cups heavy cream
6 whole extra large eggs
Steps
1.Melt 2 sticks of butter and 16 oz. of chocolate
in a double boiler.
2.Warm 6 eggs in hot water.
3.Coat a 9" spring form pan with butter. Make it
watertight with foil.
4.Beat the eggs whole until they are fluffy (like
a meringue)
5.Slowly fold the melted butter and chocolate in
to the eggs.
6.Place the mixture int he sprin form pan. Place
the pan
in a larger pan partly filled with warm water.
7.Bake at 425 degrees farenheit for 5 minutes. Cover
with foil and bake at 425 degrees farenheit for
another 10 minutes.
8.Pour on topping. Refridgerate. Serve.
Chocolate Topping for Death By Chocolate
1.Scald 2/3 cups of heavy cream in a sauce pan.
Remove from heat.
2.Add 6oz. of finely chopped semi-sweet chocolate
immediately.
3.Cover and let stand for five minutes.
4.Stir until smooth.
Test the topping by stirring. It is ready when a
drop
"mounds" before disappearing into the rest. If it
is too think - thin with warm liquor. If it is too
thin, add
more chocolate, re-heat and test it again.
PORTOBELLO MUSHROOM SOUP
Ingredients:
1 Huge Portobello Mushroom (at
least 1 pound) - sliced & diced
1 Large Onion - sliced &
diced 1 Large Zucchini - sliced & diced
6 Cooked Potatoes (boiled or
microwaved)
1 Cup cooked Red or Brown Rice
2 Cups finely chopped Broccoli
1 Stick Butter
1 Cup Texturized Vegetable Protein
(TVP) - coarse granules
Water
Olive Oil
Herbs Suggested:
Coarse Ground Black Pepper
Fines Herbes
Dill Weed
Cayenne Pepper
Tarragon
Preparation: Mash 3 potatoes
with the herbs and spices and the stick of butter until smooth. Put aside.
Cut the other 3 potatoes into large chunks and put aside as well. In your
favourite soup pot put about 3 tablespoons of Extra Virgin Olive Oil and
over a medium heat fry the dry TVP garnules until golden brown and bubbly.
Then add the sliced and diced veggies and saute until all is tender and
aromatic. Add the rice, mashed and chunked potatoes and enough water to
make it soup! Stir, simmer, enjoy the aroma for awhile and then serve with
Semolina Garlic Bread for a real hearty winter night's supper. The rice
and TVP together will give a complete balanced protein that is easily digested
and good for you! Leaving out the butter will please our vegan readers,
and the soup is practically the same! Even Spike likes it!
Instructions: Mix ingredients & bake at 400 F for 25 minutes. The measurements for spices and apples are approximate. Add more apples, subtract apples. Add spices (cloves work well)...experiment.

4 apples (red and sweet)
1/2 cup brown sugar
1/4 cup water
cherries (optional but look great on top)
1/3 cup of the wacky tobacky (approx. an 8th or a little less)
2 tbs. cinnamon
1 tsp. melted butter
First, core the apples. This can be done easily by cutting below a bit
below the stem, taking the top off. With a spoon, thoroughly
get most
of the important innards of an apple out. Next, crush the herb
and
powder in a blender and mix with sugar, water, and melted butter in
a
small eating bowl. Stuff cores with magic paste and sprinkle
the tops
with cinnamon and maybe a cherry or two. Bake (the apples) for
20-25
min. @ 350 degrees.
Believe me this is a dessert that can entertain for hours after
ingestion. ENJOY!!
